Are You Ready...

for St. Patrick's Day?
Me and Hubby are half Irish so we use any excuse to eat a good Corned beef meal--
And I love to use my crock pot. This way I can enjoy the savory smells all day long throughout our house.

Try it this way for the juiciest results:

Corned Beef and Cabbage:
Mini carrots (as many as your family will enjoy)
4 lb Corned beef brisket
2 medium onions, quartered
4 medium potatoes (only if you want)
1 cup of water (give or take, remember it's the juices)
half a small head of cabbage, cut into wedges (purple cabbage is fun sometimes for color)
Layer all of it except cabbage in cooker.
Cover.
Cook on low for 8-10 hours, or high 5-6 hours.
Add cabbage wedges to liquid, pushing it in the liquid to moisten.
Turn on high and cook an additional 2 hours.

Don't forget your green pistachio cake:
A family favorite and a family tradition.
Pistachio Pudding Cake
1 pkg. White Cake mix
1 pkg. Pistachio pudding

1 cup Soda Water

1/2 cup oil

4 eggs

Bake as directed on box

Frosting

2 cups Whipping Cream
1 pkg. Pistachio Pudding

whip until thick

We love it here and hope you do too...
When I make the cake, I always use my bundt pan.
Please try it-- I know you'll absolutely love it!

And remember your Irish soda bread.
I usually buy a couple loaves at Von's and get an extra one to freeze.
It's so yummy warmed up with butter.

I can't wait!
